2 ½ cups
flour
1/3 cup sugar
2 teaspoons baking powder
1 teaspoon salt
½ teaspoon cinnamon
¼ cup vegetable oil
2 eggs
¾ cup milk
1 2/3 cups chopped peeled, apple
¾ cup chopped walnuts
2 cups (8 ounces) chopped cheddar cheese
In a large
bowl, combine flour, sugar, baking powder, salt and cinnamon. Mix well. In a
small bowl, beat together oil, eggs, and milk. Add to flour mixture; mix
well. Stir in apples, nuts and cheese. Pour into well-greased and floured 9
x 5 inch loaf pan. Bake in preheated 350°F oven for 1 hour, 15 minutes. Let
stand 5 minutes; turn out on wire rack.
