Salad

ounce packages strawberry gelatin
3 cups boiling water
2 ½ cups cold water
5 oranges, peeled and chopped
2 cups cranberries, chopped
2 ¼ cups sugar
Dressing
1 - 8
ounce package cream cheese, softened
¼ cup orange juice
2 ½ teaspoons grated orange peel
dash of salt
Dissolve
gelatin in boiling water; add cold water. Refrigerate until partially set.
Combine
oranges, cranberries and sugar. Stir until sugar is dissolved. Mix fruit
into gelatin and turn into a bundt pan or 3 quart mold. Refrigerate until
set or overnight.
Combine
dressing ingredients in a small bowl. Using an electric mixer, beat at low
speed until smooth. Serve on salad plates. Serves 16-18.
