1 ½ cups
sugar
½ cup flour
1 teaspoon salt
2 quarts blueberries
3 tablespoons lemon juice
3 tablespoons butter
2 cups flour
4 teaspoons baking powder
2 tablespoons sugar
½ cup shortening
2/3 cup milk
1 egg, slightly beaten
Combine
the first three ingredients. Mix with blueberries and lemon juice. Pour into
a greased 9 x 13 inch baking dish. Dot with butter. Place in a preheated
400° F oven for 15 minutes.
Sift
together the remaining flour, sugar and baking powder. Cut in shortening
until mixture is coarse. Add milk and egg to dry ingredients. Stir with fork
only enough to blend.
Remove hot
blueberries from oven. Make 12 "biscuits" by dropping spoonfuls of topping
onto the hot berries. Return to hot oven. Bake 20 minutes or until
"biscuits" are browned. Serves 12.
